Puigmolto Cava Brut Reserva
50% Xarel-lo, 25% Macabeo, 25% Parellada. Fermentation of base wines at controlled temperatures, then blended with yeast and sugar and fermented in bottle at around 15C. Base wine at 10-10.5% ABV, then extra 1% of alcohol with second fermentation. Maturation for 12-15 months in bottle (minimum is 9 months for Cava) to emphasise fruit. Pale lemon with fine mousse. Aromas and flavours of white peaches, apricots, apples and pears, with good acidity and medium weight on the palate. Macabeo gives added freshness and acidity, and Parellada lends floral delicate aromas. Creamy and well-balanced on the palate, with a long and delicate finish.
