Cava Rosado

100% Trepat. Overnight maceration of grapes to obtain colour followed by fermentation of base wine at controlled temperatures, which is then blended with yeast and sugar and fermented in bottle at around 15C. Base wine at 10-10.5% ABV, then extra 1% of alcohol with second fermentation. Maturation for 12-15 months in bottle. Pale rosé in colour with delicate pearling. Aromas of raspberries and fresh fruit salad and the mouthfeel is creamy, yet crisp and fruity. Beautifully balanced.
