Bourgogne Chardonnay Les Ursulines, Jean-Claude Boisset

Description
After pressing, the fruit is transferred to barrels with no settling to preserve a maximum of lees, followed by a very long fermentation using indigenous yeasts. The wine is then aged for 5 months with no racking or stirring to bring out all of this wine’s minerality. A proportion of 10% new gently toasted French oak barrels were used for very delicate oaking.
The wine is pale yellow in colour with white highlights, this wine develops very fresh aromas of citrus and white-fleshed fruit, with floral and subtle smoky notes. On the palate, this wine is fresh and lively.

Producer Details
Like a bridge between the 18th and 21st centuries, the Boisset family winery fits naturally into the landscape like an extension of the vines into the town.
Built according to the rules of the golden ratio, inspired by geobiology and sacred architecture, and oriented according to the trajectory of the sun and the cycles of the moon and the stars, the winery of Les Ursulines brings together cosmic and telluric energies. This place is imbued with both grandeur and humility, and dedicated to the production of the Boisset Burgundy wines, linking the earth to the sky, and the infinitely small to the infinitely great.
