If there’s nothing we love more here at Polly’s it’s setting ourselves little challenges to keep our day to day brewing fun and sharing those challenges with our fans and drinkers alike. When writing the recipe for this beer, we set ourselves a task of creating a new school hop bomb of a pale ale, but the stipulation being, we weren’t allowed to use any hop released commercially after the year 2000. With this noodle-scratching conundrum in our brewers collective minds, they set about working with all the techniques and knowledge they’ve gained from their years of brewing knowledge and created Leading Edge. A juice-forward pale ale hopped with Citra, Columbus, Centennial, and Simcoe; the two classic C hops build the base of this beer, with delicate bitterness floating throughout – think pine needles, resin, and pink grapefruit to start. Where this beer really comes alive though is in its second two hop charges – Simcoe and Citra really showing why they changed the game so much with lemon and lime citrus notes, paired with apricot, passionfruit, and fresh berries. Mission accomplished, team.

Founded in 2018 as a two-man operation working out of a converted stable on a rickety, wood-bound brew kit, Polly's Brew Co. have rapidly grown since day one to where they find ourselves today – in a brewery twelve times the size of they original brew space, capable of brewing up to eight times a week, looking after the livelihoods of fourteen incredibly talented team members.
