We love making reference to and resurrecting old in-house favourites here at Polly’s HQ, and treating them to all the modern and new techniques we’ve learned over our last seven years as a brewery.
Columbus Mosaic was a surefire sleeper hit from our dearly departed Originals range back in 2019, and we’re bringing it right into 2025 with an amplified dry hop bill, and our in-house LA3 strain for maximum suspension in the glass.
We’ve squeezed every ounce of flavour we can out of this beer – Columbus bringing some surefire old school pine and resin to the table, before being balanced out with a whole host of dank, juicy, tropical notes from the ever dependable brewery favourite, Mosaic. A love letter to a range of beers that brought us to where we are today, and wouldn’t be half the brewery we are without, this is our Originals range completely kicked into the present!

Founded in 2018 as a two-man operation working out of a converted stable on a rickety, wood-bound brew kit, Polly's Brew Co. have rapidly grown since day one to where they find ourselves today – in a brewery twelve times the size of they original brew space, capable of brewing up to eight times a week, looking after the livelihoods of fourteen incredibly talented team members.
From those very humble beginnings, Polly's Brew Co. mantra has always remained the same – never stop improving. They want to produce the best beer they possibly can, and make Polly’s the best place to work for their incredible team.
