Vin Santo del Chianti Rufina, Fattoria Selvapiana
Description
HALF BOTTLE. Deep amber in colour with aromas of dried fruits on the nose. This wine is intense, rich and luscious. The sweetness is balanced by good acidity and concentration, ensuring a long, fresh finish.
The grapes are grown in a two-hectare vineyard situated in Chianti Rufina DOCG, north east of Florence, Tuscany. The vineyard faces north-east and is situated 200 metres above sea level. The vines are approximately 15-years-old and are planted at a density of 3,200 per hectare.
Grapes are hung to dry in the cellar for about five months, after which they are pressed. The must is then racked into caratelli (small barrels of different size from 50 to 200 litres) made of oak and chestnut wood. The caratelli are then sealed with concrete and the must is fermented and aged in these vessels for seven years without any intervention. There is no 'madre' (a starter culture of yeast lees) used at Selvapiana, The fermentation starts with the grapes wild yeasts. At the end of the ageing period, the resulting wine is usually only 18-20% of the initial yield.

Since 1997 Selvapiana is run by Francesco Giuntini’s adopted sons, Federico and Silvia, sons of the estate manager Franco Masseti, who worked with Francesco from 1953 to 1990. Most of the vineyards are located next to the Villa which is also the center of the winery. The organically farmed vineyards are named after the old crop-sharing system.
