J Bouchon Pais Salvaje White

It all began towards the end of the 19th century when a young viticulturalist from France named Emile Bouchon settled in Chile. Since that time four generations of the Bouchon family have been creating wines in the Maule Valley. Current incumbent Julio Bouchon and his children carry on the family tradition of creatng distinctive, terroir-driven wines including the celebrated Pais Salvaje (Wild Pais), which is grown in a forest from self-seeded vines over 100 years old, and requires hand harvesting on ladders, some of which are 5 metres tall. The yield is understandably very low.
The wine is wild-fermented with minimum temperature control, and kept in clay amphora which accentuates micro-oxygenation and complexity. Finally, the wine is bottled unfined and unfiltered.
In the glass, the wine is a golden copper colour with notes of orchard fruits including pear and apple with a zesty white pepper and savoury, complex finish.
This wine is ideal with pork, veal, chicken or dishes with a cream sauce.
