Description
This Champagne is a blend of Premier Cru and Grand Cru, exclusively of Chardonnay variety from the towns of Avize and Mesnil-sur-Oger (both Grand Cru) for 92%, and 8% from Villers-Marmery (Premier Cru).
The colour is crystal clear and bright with white gold reflects.
To the nose : white and yellow vine peach, Mirabelle plum, nectarine and kumquat, combined with notes of pastries and honeysuckle followed by aromas of white flowers.
The attack to the palate is silky, with mineral undertones, combined with notes of citruses like Menton lemon or Florida pink grapefruit. Beautiful and pure lingering finish.
Food pairings : tuna or salmon carpaccio, caviar, sushi, sashimi. Even better with a lobster, a grilled bass. Would also fit well with a Chaource cheese.
