Pastore is a family run, mixed fermentation sour and wild brewery based in Cambridgeshire, UK. They make fresh super-fruited sours and barrel aged blended wild ales. At Pastore they want to help make the UK a centre of modern, innovative sour and mixed fermentation brewing. Pastore aim to showcase the full depth and breadth of what this style of brewing can be. All of their beer is mixed fermentation but by using different cultures they achieve a range of flavour profiles, from fresh fruited Berliner Weisses to hazy New England sour IPAs to oak-aged wild ales.
