Description
100% Pinot Noir. Grapes were hand-harvested in the crisp morning and carefully hand sorted. The whole bunch was fermented and pressed; only free-run juice was used to ensure the best quality. A partial malolactic fermentation (25%) was done to soften the acidity but to still preserve freshness and genteel aromas. After blending and bottling, a secondary fermentation was induced to initiate that fine bubbles Méthode Cap Classique is celebrated for.

Benguela Cove Wine Estate in the Western Cape is a specialist producer and wine destination at the start of the Hermanus Wine Route in the Walker Bay region. Located between Cape Town and Hermanus, the estate boasts the longest stretch of ocean facing vineyards (2.6km), grown at the lowest altitude (2.7m above sea level). Their winemakers use only estate-grown grapes, which are produced and bottled at their on-site state of the art winery.
