Description
Long fermentations in temperature-regulated stainless steel vats. Spontaneous malolactic fermentations. On fine lees in stainless srteel exlusively with the less manipulation possible. Maturation: 6 to 8 months. Long stabilisation with moderate cooling. Bentonite bonding if necessary. A single, light filtration before bottling with care by a professional group. Synthetic cork.
As an apéritif with or without crème de cassis (Kir ingredients), this wine also goes well with shellfish or cured hams.

In 2005, a 24-year-old Jean-Christophe Perraud founded Domaine Perraud and began making wine from his family's organic vineyards in and around Mâcon and Saint-Véran. Until then, the family had sold their fruit from these 30-hectarres of vines to local co-operatives. Domaine Perraud is a fine example of a young producer striking out on their own, with the family’s vineyards, to create what will undoubtedly become one of the Mâconnais’ most respected domaines.
