Mateo Quintas Castees is made with selected grapes from terraces located on the banks of the Ávia River. Harvested by hand, the grapes are selected for their ripeness and taken to the winery for immediate pressing. This ensures that the grapes arrive in their optimal state of preservation, thus retaining all their organoleptic qualities.
Fermentation is carried out separately for each variety at a controlled temperature. After fermentation, the wine is stored in stainless steel tanks, awaiting the low temperatures of the Ribeiro region's cold winter, which promote a gentle settling and clarification process entirely naturally.
Before bottling, the varieties are blended, resulting in 15,000 bottles.
