We’re going to go out on a limb here, but we think we’ve taken to the Oat Cream IPA game pretty well since we seriously put it into our brewing schedule earlier in 2025. Inspired by the US haze merchants that inspired us to brew in the first place, and wanting to replicate that creamy, soft, and pillowy experience that those masters of the game bring to the party, we’ve outdone ourselves on Dolcita Sabrosa. A celebration beer for the recently named HBC-1019, now under the name Dolcita, we were immediately drawn to the rich tropical, pineapple and creamy notes of this incredible hop to introduce to one of our Oat Cream beers. Paired up with in-house favourite, and similarly tropical creamy hype hop Sabro, with a final flourish of stonefruit from stalwart hop Simcoe, this is a decadent, rich, full bodied experience of an IPA and a delight from first sip to last.

Founded in 2018 as a two-man operation working out of a converted stable on a rickety, wood-bound brew kit, Polly's Brew Co. have rapidly grown since day one to where they find ourselves today – in a brewery twelve times the size of they original brew space, capable of brewing up to eight times a week, looking after the livelihoods of fourteen incredibly talented team members.
