It’s a tale we’ve told almost as many times as our name change story. The discovery and delight in trying our first ever Mountain IPA as guided by the master from Colorado himself Doug Odell was a landmark moment for us – hitting that perfect balance between the crisp and bitter drinkability of a West Coast IPA and the soft, hazy body of a New England IPA, we knew it was a style we wanted to bring back to the brewery and give a whirl to ourselves. We’ve tried and tested our techniques since that first effort back in 2020 and we’re back again with our first Mountain IPA of 2026 in Undercurrent. Fermented out with our house LA3 strain to bring forward all those fruit-forward esters and delicately balanced with a hop bill of old school titans Centennial and Citra, with a new school flourish of El Dorado and Simcoe, this beer sings with a grassy, resinous bitterness, with an undertone of tropical candy flavours

Founded in 2018 as a two-man operation working out of a converted stable on a rickety, wood-bound brew kit, Polly's Brew Co. have rapidly grown since day one to where they find ourselves today – in a brewery twelve times the size of they original brew space, capable of brewing up to eight times a week, looking after the livelihoods of fourteen incredibly talented team members.
From those very humble beginnings, Polly's Brew Co. mantra has always remained the same – never stop improving. They want to produce the best beer they possibly can, and make Polly’s the best place to work for their incredible team.
