Madeira Wine

Madeira is a Portuguese island in the Atlantic, off the north coast of Africa, where they make fortified wine that was historically highly prized. Madera is an oxidised wine style that is made by heating and ageing the wine to enable it to live for a long time, in some cases for centuries. It is made in a range of styles, from bone dry to tooth achingly sweet, and should be known for more than just being a cooking ingredient.
