Pinot Noir, Montsable
Description
This classic Burgundian variety has been produced in the sunny climate of Languedoc in the south of France. Although much warmer than the cool climate of the Côte d'Or great care has been taken to ensure that it is every bit as elegant. The nose is aromatic with fresh cherries, strawberry and bramble and just the faintest hint of vanilla. On the palate there is tremendous depth to the fruit which is supported by an underlying minerality and beautifully balanced acidity.

Noble wines. Elegantly crafted.
The Haute Vallée Limoux may be close to the wilds of the mighty Pyrénées but the cooler climate and limestone rich soils are the perfect host to classic noble varietals. With a tip of a hat to our Burgundian cousins, we craft fresh, elegant and complex wines.
