In Meerbeek, Brakel, a tad outside the Pajottenland, lives Mireille. She is one of the 70+ Schaarbeekse orchard owners we source our local cherries from. Mireille has one of the most bewildered collections of Schaarbeekse trees. While a wild Schaarbeekse grows like a bush, Mireille has let them grown to a dense hedge. Every summer, it bursts with the most tasty Schaarbeekse sour cherries that one could only dream of. In the summer of 2020, Mireille has brought in 231 kilos of pristine cherries.

She had carefully selected them in the most thorough way possible. That is the exact reason why we did a dedicated maceration on a small oak barrel. We also collected quite some root shoots to multiply them for later.

The lambikken that we used come from two different barrels and three different brews. One quarter of the lambikken were brewed with our own cereals from our cereal circle of farmers. We macerated for six months.

The final fruit intensity is 315 grams of sour cherries per litre. 100% 3 Fonteinen brewed lambik.

3 Fonteinen Schaarbeekse Kriek is the result of macerating local hand-picked Schaarbeekse cherries on traditional lambik. No addition of juices, syrups or artificial sweeteners.
