Description
100% Chardonnay aged ‘sous voile’, under a thin film of yeast very similar to the Flor that gives Fino sherry its distinctive character. Ripe and elegant with red apple and lemon zest fruit complemented by the complex walnut, brioche and dried fruit notes that come from the deliberate oxidation. Long and savoury, it is fantastic with cheeses - particularly hard mountain cheeses such as Tomme or Comte, fish and wild mushroom dishes.
